Happy New Year Friends!
This year is starting off with some scary news reports of the flu. So many people have the flu, and many cities are in 'epidemic' stage. Yikes. That is scary. Let's all be sure we are eating right, getting some exercise, not over stressing ourselves, staying away from sugar and dairy, and eating LOTS of GARLIC! YEAH! WE LOVE GARLIC in this house.
Here is an easy way to load up on it. I made this for my family during a summer vacation in Hilton Head in 2011 and my brother tried to eat all of it. He wanted it every night after that, and called me once home to walk his wife through the steps to make it for him. -! It's still a hit in our house, so let's get to it!
Garlicky Squash Rounds
1 Butternut Squash
10-15 Cloves of Garlic
1/4 Cup EVOO
Salt and Pepper
Start with your Butternut Squash. Here's a plug- Trader Joe's sells them for $1.99 EACH, no matter how big it is. I, of course, pick out the biggest ones and am happy knowing how much I save buying it there, in contrast, another store has them $1.69/lb (about 3 lbs in a good sized squash).
Peel it with a veggie peeler. Then slice it with a nice sharp knife in rounds, all the way down to the end of the squash. Scoop out the seeds. Place your rounds on a baking sheet lightly coated with EVOO.
Then chop up the garlic nice and fine, put it in a bowl, and add the EVOO to it. Using a spoon, evenly distribute the garlic to the rounds you have. I use the back of the spoon to smear on even coverage of the whole surface of the round. Salt and pepper-generously.
Bake at 375 in the middle of the oven (so you don't burn up the garlic) for about 30 min or until a knife easily inserts into your squash. When you plate them, make sure you use a spatula and get all the caramelized gooey goodness of the juices in the pan, drizzle that on top. mmmmmm
Cold and flu season is no joke, and neither will your breath be after this dinner. So be sure you don't eat it on a Saturday night and offend everyone at church on Sunday, but DO eat lots of garlic! It is so good for you. Bon appetit and stay healthy!
A New Book!
Well, I am excited about the Lord, and all He has done, is doing, and will do. He is faithful and true to His word. I am a living testimony to that very truth. God directed and allowed me to write down some living stories of wonderful things I have seen Him do, and ways He has shaped me and taught me over my life so far. I am very excited to see what He will do with it, in the hearts and lives of those who receive it.
It is all about Him and all for His glory! I love love love Jesus and owe everything to Him!
